This dish is great as a dinner or a lunch and it is quick and easy to prepare.
Ingredients:
1/3 cup each: plum sauce, extra-virgin olive oil
1 tsp Dijon-style mustard
2 tsp balsamic vinegar

400g diced cooked chicken
100g blue cheese, crumbled
120g bag baby spinach leaves
1/2 cup chopped walnuts

Method:
Whisk plum sauce, olive oil, mustard and vinegar in a bowl. Add chicken and toss to coat.
Arrange spinach leaves, blue cheese and chopped walnuts on a platter. Add chicken and mix in carefully using tongs. Serve immediately.
